In a bowl, whisk the Greek yogurt with honey, vanilla, lemon zest, lemon juice, and a pinch of salt until smooth and lightly whipped. Taste and adjust sweetness or lemon to your liking.
Slice larger berries like strawberries. Keep smaller berries whole so they hold their shape.
Optional but great: Toss berries with a small drizzle of honey and a few drops of lemon juice to brighten them up.
Assemble the parfaits in glasses or small bowls: spoon a layer of yogurt, add a layer of berries, then a light sprinkle of granola.
Repeat the layers once more, finishing with berries on top for color.
Add mint if using.
Serve right away for crunch, or chill for 15–30 minutes for a slightly softer, dessert-like texture.
