Light Dessert That Won’t Weigh You Down - Lemon Berry Yogurt Parfait

Ingredients
  

  • 1 1/2 cups plain Greek yogurt (2% or 0%, depending on your preference)
  • 2 tablespoons honey or pure maple syrup, plus more to taste
  • 1 teaspoon pure vanilla extract
  • 1 lemon (zest and 1–2 teaspoons juice)
  • 1 1/2 cups mixed fresh berries (strawberries, blueberries, raspberries, or blackberries)
  • 1/2 cup granola or lightly toasted oats
  • 1 tablespoon chopped fresh mint (optional)
  • Pinch of fine sea salt

Instructions
 

  • In a bowl, whisk the Greek yogurt with honey, vanilla, lemon zest, lemon juice, and a pinch of salt until smooth and lightly whipped. Taste and adjust sweetness or lemon to your liking.
  • Slice larger berries like strawberries. Keep smaller berries whole so they hold their shape.
  • Optional but great: Toss berries with a small drizzle of honey and a few drops of lemon juice to brighten them up.
  • Assemble the parfaits in glasses or small bowls: spoon a layer of yogurt, add a layer of berries, then a light sprinkle of granola.
  • Repeat the layers once more, finishing with berries on top for color. Add mint if using.
  • Serve right away for crunch, or chill for 15–30 minutes for a slightly softer, dessert-like texture.
