Make the filling: In a bowl, beat peanut butter, softened butter, powdered sugar, vanilla, and salt until smooth and thick.
Add crunch: Stir in the crushed pretzels or crackers until evenly combined.
The mixture should hold together when pressed.
Shape the bites: Scoop about 1 tablespoon of mixture and roll into balls. Place on a parchment-lined tray. You should get 24–30 bites.
Chill to firm: Refrigerate for 20–30 minutes so they’re easier to dip.
Melt the chocolate: In a microwave-safe bowl, heat chocolate and oil in 20–30 second bursts, stirring between each, until smooth and glossy.

Dip and decorate: Using a fork, dip each chilled ball into the melted chocolate, let excess drip off, and set back on the tray. Sprinkle with flaky salt, chopped peanuts, or sprinkles while the chocolate is still wet.
Set and serve: Chill for 15–20 minutes until the coating is firm. Serve on a platter with toothpicks for easy grabbing.
