Ingredients
  

  • 1 cup creamy peanut butter (not natural/runny for best texture)
  • 3 tablespoons softened unsalted butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon fine sea salt (plus more for garnish, optional)
  • 1 1/2 cups crushed pretzels or buttery crackers (Ritz-style), finely crushed
  • 2 cups semi-sweet chocolate chips (or dark chocolate, chopped)
  • 1 tablespoon coconut oil or neutral oil (for smoother melting)
  • Optional toppings: flaky sea salt, chopped peanuts, sprinkles, or a drizzle of white chocolate

Instructions
 

  • Make the filling: In a bowl, beat peanut butter, softened butter, powdered sugar, vanilla, and salt until smooth and thick.
  • Add crunch: Stir in the crushed pretzels or crackers until evenly combined. The mixture should hold together when pressed.
  • Shape the bites: Scoop about 1 tablespoon of mixture and roll into balls. Place on a parchment-lined tray. You should get 24–30 bites.
  • Chill to firm: Refrigerate for 20–30 minutes so they’re easier to dip.
  • Melt the chocolate: In a microwave-safe bowl, heat chocolate and oil in 20–30 second bursts, stirring between each, until smooth and glossy. Or melt in a double boiler.
  • Dip and decorate: Using a fork, dip each chilled ball into the melted chocolate, let excess drip off, and set back on the tray. Sprinkle with flaky salt, chopped peanuts, or sprinkles while the chocolate is still wet.
  • Set and serve: Chill for 15–20 minutes until the coating is firm. Serve on a platter with toothpicks for easy grabbing.
